Italian food with a conscience

Mmmmm, yesterday I was running around and didn't remember to take pictures of anything until dinner time. So.. without further ado;

Yummy hearts of romaine, radicchio, and baby spinach salad with avocado, cucumbers, grape tomatoes, garlic croutons, and Italian dressing.

Got in my MUFA's with the 1/4 c avocado (and the tahini in the hummus below!)



1 cup of spaghetti noodles, 1 tbsp browned butter (don't worry, it's EASY to make), 1 tbsp mizithra cheese. They have a recipe similar to this at The Old Spaghetti Factory and it's pretty spot on. Seriously though, how can you mess this up? On the side we toasted flat bread with garlic butter and Parmesan cheese to make little "pizzas" and served them with 2 tbsp of sun dried tomato and basil hummus.
